This isn't really holiday related, but with the weather getting colder and snow storms coming my way this week Chili and Cornbread sound like the best thing ever. Today you are getting my cornbread recipe. It isn't a secret just a good recipe. I made this Cornbread recipe from AllRecipes for my family over Thanksgiving Holiday and they really enjoyed it a lot.
Mom's only comment on the recipe is that it isn't true and authentic Southern Cornbread, because it is sweet. If you feel the same way then just don't include sugar. But for this Californian raise blonde I like my cornbread sweet!
Serves: 1 - 9" round dish
1 cup all-purpose flour
1 cup yellow cornmeal
2/3 cup white sugar
3 1/2 tsp backing powder
1 cup milk
1/3 cup vegetable oil
To Start: Preheat your oven to 400 degrees F, spray or grease a 9" round cake or pie dish.
In a large bowl, combine dry ingredients - flour, cornmeal, sugar, salt and baking podwer. After mixed stir in the wet ingredients - egg, milk and vegetable oil. Make sure you scrap the bottom of the bowl for dry ingredients.
Pour batter into the greased pie dish and place in a preheated over for 20 to 25 minutes.
Enjoy with butter or honey!
